Easy Microwave Quiche

Ingredients

  • Cooking spray
  • 1 large egg, beaten
  • 1 Tablespoon 1% milk
  • 1 Tablespoon diced ham
  • 1 teaspoon sliced chives or green onion
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • 1/4 cup shredded cheddar cheese 1 ounce
  • half of a slice of toasted sandwich bread (optional)

Instructions

  • Coat the inside of a microwave safe dish (see notes) with cooking spray
  • Combine the egg and milk and whisk together
  • Add the ham, chives, garlic powder, onion powder and cheese
  • Mix well
  • Tear toast into small pieces, add to quiche and stir
  • Cook 30 seconds in microwave on high.
  • Remove from microwave and stir
  • Cook 40 seconds to one minute more on high
  • Stir. It's ok if the eggs are slightly liquid in the middle at this point, they will continue to cook as you mix the hot edges into the rest of the eggs
  • Microwave oven cooking times will vary

Notes

My microwave is 1.65 kw / 1650 watts
The eggs will rise up the sides of the cooking dish, so be sure to choose a dish that has enough height to allow for this.
